- Elaborate new menus / recipes in response to customer requirements or specificities
- Taste the different preparations, checks and corrections if necessary
- Supervise cooking knowledge
- Carry out internal audits and controls (food test) to ensure that menus (products, weight) are properly produced.
- Control and ensure the correct procedures application and quality delivery of the service provided
- Guarantee the quality of products in relation to the procurement department
- Train production staff in the main culinary techniques required to provide services
- Respecting and enforcing health and safety rules
- Lead the teams in charge of preparing the recipes and ensure the complete implementation on our internal ERP (menu plan and technical data sheets).
