**Description:

  • Job Function / Description:
  • To prepare and adhere to a yearly budgeted food cost and discuss recommendations with the Food & Beverage Executive Manager.
  • To ensure food wastage is maintained at below % purchasing power.
  • To monitor a quarterly foodpurchasing exercise on standard high cost items by obtaining quotations from three suppliers.
  • To ensure all staff are trained in relation to the various hygiene and safety at work act together with all other relevant legislature.
  • To understand and comply with the Company disciplinary procedure.
  • To motivate, promote and develop the departmental staff.
  • To ensure staff dress to agreed company standards.
  • To monitor staff duty rooster to meet business needs and minimize all overtime and use of casuals unless approved.
  • To plan a yearly holiday schedule and ensure all holiday entitlement is identified and included within the financial year.
  • To approve the weekly time sheets.
  • To monitor standards of staff performance and take remedial action where necessary.
  • To suggest food promotions in conjunction with the food and beverage executive manager and carry out competitive research.
  • To propose individuals for major national / international food competitions and encourage departmental participation.
  • To develop and maintain trade contracts.
  • To act as project leader for major kitchen refurbishment.
  • To liaise with Cost / Asset Supervisor and the Restaurant Department / Banquet Department concerning special requirements.
  • To discuss menu's with major clients.
  • To direct the stewarding department on cleaning schedules.
  • To ensure all kitchens liquor is maintained if any.
  • To ensure all those responsibilities are maintained in the satellite kitchen.
  • Implementing high standards consistently whilst improving profitability.
