- Manage allaspects of the kitchen including operational, quality andadministrative functions
- Manage the provision of food toFood and Beverage outlets and taking action where necessary toensure compliance with current legislation
- Assist inpositive outcomes from guest queries in a timely and efficientmanner
- Ensure foods are of good quality and storedcorrectly
- Contribute to menu creation by responding andincorporating Guest feedback
- Ensure the consistentproduction of high quality food through all hotel food outlets
- Manage customer relations when necessary, in the absenceof the Executive Chef
- Ensure resources support thebusiness needs through the effective management of workingrotations
- Support brand standards through the trainingand assessment of the Team
- Manage the kitchen brigadeeffectively to ensure a well-organized, motivated Team
- Control costs without compromising standards, improving grossprofit margins and other departmental and financial targets
- Assist other departments wherever necessary and maintaingood working relationships
- Comply with hotel security,fire regulations and all health and safety and food safetylegislation
- Report maintenance, hygiene and hazardissues
- Be environmentally aware
