    • Assign in detail,specific duties to all employees under your supervision &instruct them in their work, in order to manage the daily kitchenoperation, quality control & foodhygiene
    • Ensuring creativemenu planning, all recipes & product yields are accuratelycosted, reviewed regularly, as well as MEP is done according torecipes, portion control & wasteminimization
    • Ensure thatfood stock levels within the culinary department areas are ofsufficient quantity and quality in relevance to the hotel occupancy& forecasts
    • To workin close conjunction with the F&B manager and respective& teams, to create a yearly marketing Plan for theoutlet
    • Check the taste,temperature and visual appeal of food items prepared to ensure thatthe quality and portion are consistent and as per specificationsset out
    • Interacts withguests to obtain feedback on product quality and servicelevels
    • Responds to andhandles guest problems and complaints & reports always tosenior
    • Make recommendationsto the Chef de Cuisine regarding successionplanning
    • Provides guidanceto junior kitchen staff members, including, but not limited, toline cooking, food preparation, and dishplating
    • Leading by exampleon all hygiene requirements (safe personal hygiene and sanitaryfood-handling practices, labelling and FIFO/FEFOpractices)
    • Prevent the useof contaminated products in any phase of food preparation andprevent colleagues who are ill or suffering from an infection fromtaking part in the preparation or handling offood
    • To be aware of allfinancial budgets andgoals
    • Ensure that allsafety, health, security and loss control policies and proceduresand Government legislation are adheredto

    TeamManagement

    • Manage& provide leadership to all subordinate such as cdp, commisas well as stewarding & ensure adherence to all company andhotel policies and procedures at alltimes
    • Project a positive andmotivated attitude amongst all colleagues & conduct regularteam meetings where active attendance iskey
    • Ensurepositive & constructive feedback on work performance isgiven very regular in fair manner to encourage a positive &eager environment
    • Learn tocoach and counsel employees in a timely manner, in accordance withcompany policies, don't hesitate to involve seniors inorder for best level outcome & always keep following upon
