    • Responsible for the quality of allfood served throughout the restaurants and banquet and ensures thatthe food presented to guests is consistently of high-qualitystandards.
    • To constantly be alert on freshness,presentations and temperature of foodserved
    • Planning, co-ordination and supervisionof all menu implementations.
    • Guides respectiveChef in charge of the outlet in creating and developing new dishesand recipes by keeping up with the latest markettrends.
    • Supervises all food tastingsessions.

    COSTCONTROL

    • To beprofitable and cost conscious and needs to be responsible about thedaily requisitioning of all perishable and non-perishable fooditems.
    • Guides respective Chef in charge of theoutlet constantly finding ways to further improve the food costthrough strategic purchasing and working process, withoutnegatively affecting pre- determined qualitystandards.
    • Be responsible and accountable forthe overall food cost as well as non-food costs such as kitchensupplies, energy costs, utensils and operating guestsupplies.
    • Controls and ensures thatexpenses/purchases/requisitions are within budget limits andmaintains food gross profit set by thehotel
    • Ensures food portioning, serving,requisitions and receiving from stores are properly controlled tominimise wastage, in line with Standard OperatingProcedures.
    • Demonstrates management abilitiesand knowledge relating to budget matters such as Labor Costs,Training Expenses, Operating Equipment and Food Costetc.
